Makes 6 large muffins or 12 small.
Ingredients:
- 2 cups of oat flour.*
- Cinnamon to the taste
- 1 teaspoon of baking soda.
- 1/4 teaspoon of salt
- 3 bananas
- 3 eggs
- 3 tablespoons of coconut oil.
- 1 to 2 teaspoons of pure vanilla essence.
- 1/2 cup of raisins and figs, or dates, soaked beforehand in water, enough to cover.
Preparation:
- First mix in a bowl the flour, baking soda and cinnamon.
- In a large bowl whip together the eggs, bananas, vanilla and coconut oil.
- When fluffy and unctuous, start adding the flour and whisk with a wooden spoon.
- Mix in the dried fruits with the water.
- Add nuts if desired.
- Spoon batter in muffin cups and add the 1/2 nut on the top.
- Cook at 350 F for about 35-40 minutes for the large muffins and less for the smaller ones.
*I sometimes use the fibre left from my almond milk. Then I use 1 cup of oat flour and 1 cup of that almond fibre.
I also vary the recipe. For example:
- Instead of the dried figs, use 1 cup of walnuts and 1/2 cup of organic raisins. Or substitute the raisins, for a seedless date to top the muffin when ready to cook, or for one cup of blueberries (one of my favourites).
- Or I make them with 1 large grated apples instead of the blueberries with raisins or some dates cut in small pieces.
- Or raspberries with coconut and cardamon….
- Or strawberries with rhubarb 3 for 1….
